On May 7 and 8, 2027, the Steinbeisser Creative Studio and the Section for Agriculture welcome world-renowned chef Ana Roš of the three-Michelin-star restaurant Hiša Franko to the Goetheanum in Dornach. For this special occasion, Ana Roš will create an exclusively plant-based menu featuring biodynamic produce from the Goetheanum gardens, alongside ingredients from biodynamic and organic producers in Switzerland and Slovenia.
Ana Roš: A self-taught culinary artist, Ana Roš's cuisine is a vibrant expression of the seasons, her heritage, personal journeys, character, and femininity. She is one of only a handful of women worldwide leading a three-Michelin-starred restaurant. In 2017, she was named The World's Best Female Chef by The World's 50 Best Restaurants. Known for her bold and innovative approach to gastronomy, Ana Roš seamlessly combines tradition, creativity, and sustainability, creating a culinary experience that is both distinctive and influential.
Experimental Gastronomy: "Why do we eat the way we do—and could it be different?"With this question, Steinbeisser explores new ways of conscious dining. Artists respond by designing unconventional cutlery, tableware, and textiles that challenge established dining conventions. Individually handcrafted from natural materials such as driftwood, flax, mycorrhiza, algae, and plant fibres, these unique objects transform the act of eating into an unexpected sensory experience. The artworks are available during the dining events and through the Steinbeisser online store.
Biodiversity: Switzerland's celebrated landscapes and rich biodiversity are increasingly under pressure. Today, one-third of all species and half of all habitats are threatened by intensive land use and climate change. Artists and design students from Lucerne University of Applied Sciences and Arts take up this challenge by placing biodiversity and sustainable resource use at the centre of their work. Through thoughtfully designed objects, they invite guests to experience food in new ways while reflecting on our relationship with the natural world. Eighty percent of Steinbeisser's proceeds support nature conservation and the restoration of natural habitats, with a particular focus on endangered native plant species.
